FOOD FRIDAY: CUBAN FLAN
Did you know that AVALA’s HR Director, Eddy Vargas, is Cuban? For this Food Friday his mother Blanca shared her Cuban Flan recipe and family story with us!
Ingredients
- 7 Eggs
- 2 Cans Condensed Milk
- 1 Can Evaporated Milk
- Cinnamon
- Vanilla Extract
- Salt
- Sugar
Preparation:
- Preheat oven to 350 degrees
- In saucepan melt sugar until caramelized
- Carefully pour sugar into baking dish to evenly coat the bottom and sides
- Seperate 7 eggs, whites from yolks
- Whip the egg whites until they appear “cloud” like, called Merengue in Spanish
- Then add one egg yolk at a time to mixture
- Add 2 cans condensed milk
- Add 1 can evaporated milk
- Add 1 teaspoon of vanilla extract
- Add a pinch of cinnamon
- Add a pinch of salt
- Blend mixture together
- Once blended, pour into baking dish with caramelized sugar
- Bake for 1 hour, 15 minutes
- Once complete, let cool
- Place on crystal or porcelain platter to serve
Vargas Family History
Eddy’s family fled Cuba in 1962 seeking freedom. His family arrived in the United States with only the clothes they were wearing. Eddy’s family worked 2 to 3 jobs to provide their children with a sustainable life and bountiful education – they struggled but kept pushing forward.
In 1970 Eddy’s family became United States Citizens. Blanca, Eddy’s mother, said “we love this country! As I look back, I am so grateful to see that our efforts were not in vain. My family is flourishing with wonderful careers and lives. I feel a deep sense of gratitude.”
